Whether we are talking about self-preservation or suicidal bravery, the horse gives you more control over the situation.

It is really hard to kill a horse. It is fairly easy to mortally wound a horse, but it won't actually be dying anytime soon. So while someone might stab your horse and make it throw you, it is just as likely to keep going for a few minutes, long enough to save your life and trample someone. Likewise, an orderly dismount from a wounded animal is more likely than being bodily thrown to the ground.
